Personally, I had never heard the term spatchcock until tonight, let alone would have known that it's an 18th century term from Ireland that means to butterfly.  I did, however, read about someone who cut the time of grilling a whole chicken in half by laying it flat.  When I consulted our bbq cookbook, I learned about spatchcock.

Basically, what I had to do was remove the backbone and breast bones of the chicken.  For a rookie, I think I did okay.  Also this exercise illustrated that we need poultry shears.  Once the chicken was laid flat, we rubbed it with salt and put lemon slices under its skin.  You can tell from the pictures that the chicken got a little crispy, but regardless it was delicious.  A nice treat since we don't bbq chicken often.
